Food and Beverage Duty Manager

About the role

We are looking for an experienced Food and Beverage Duty Manager to lead our restaurant, bar, room service and function operations at Sudima Kaikoura. You will ensure an efficient, high‑quality service experience for guests across breakfast, lunch and dinner shifts, including weekends.

Key responsibilities

• Manage the Food & Beverage department on shift, covering restaurant, bar, room service and events.
• Drive revenue to meet or exceed budgeted targets.
• Account for stock, place orders through the company purchasing system, and prepare cash‑flow reports.
• Control costs, optimise productivity and implement cost‑reduction initiatives.
• Maintain compliance with liquor licensing laws, responsible service of alcohol and health & safety regulations.
• Train, supervise and schedule the restaurant team, conduct shift briefings and handle guest complaints.
• Ensure superior customer service and uphold the hotel’s service standards at all times.

Required profile

• Reliable team member able to work unsupervised and as part of a team.
• Willingness to work a rotating roster covering seven days a week, including weekends and public holidays.
• NZQF Diploma (ANZSCO Skill Level 2) or at least two years of relevant experience; relevant experience may substitute for formal qualifications.
• Prior experience in restaurants, conferences and events; team‑management experience preferred.
• Valid General Manager License (GM License) and LCQ qualification are preferred.
