About the role

As a Chef de Partie you will help deliver a memorable dining experience for guests at Lume Restaurant, part of Peppers Clearwater Resort. You will work closely with the kitchen brigade to maintain high standards and contribute to innovative, delicious dishes.

Key responsibilities

  • Manage your kitchen section efficiently, ensuring smooth service flow and assisting other sections when needed.
  • Take charge at the pass as required and monitor food and labour costs to stay within budget.
  • Produce consistently high‑quality, well‑presented dishes that meet property guidelines and service timelines.
  • Guide and train junior kitchen staff, supporting their development.
  • Maintain a clean, safe, and organised kitchen with a strong focus on food safety standards.

Required profile

  • Previous experience in a professional kitchen as a Demi Chef or Chef de Partie.
  • Strong knowledge of local health, safety and compliance regulations, including HACCP.
  • Commercial cookery certification (required) and preferably a safe food handling or food safety supervision certificate.
  • Excellent organisational abilities for preparation, planning and cost control.
  • Flexibility to work a range of shifts, including weekends and public holidays.
