Sous Chef / Chef de Partie – Lead Kitchen Team

About the role

We are looking for an enthusiastic Sous Chef / Chef de Partie to join our busy Eastbourne gastropub ahead of the summer season. You will work side‑by‑side with the Head Chef and owners, helping to shape the kitchen culture and consistently deliver great food to our loyal local clientele.

Key responsibilities

• Assist the Head Chef in daily kitchen operations and menu execution.
• Lead and mentor junior kitchen staff, fostering a collaborative environment.
• Oversee food preparation, cooking, and plating to maintain high quality standards.
• Manage inventory, stock rotation, and ordering to minimise waste.
• Ensure strict adherence to health, safety and hygiene regulations.

Required profile

• Proven experience as a Sous Chef, Chef de Partie or similar role in a restaurant or gastropub.
• Passion for producing consistently excellent dishes in a fast‑paced setting.
• Strong leadership attitude and ability to work closely with the Head Chef and owners.
• Flexibility to work evenings, weekends and busy periods.
