Restaurant Manager – Pullman Auckland Airport

About the role

We are seeking an experienced Restaurant Manager to lead the dining operations at Pullman Auckland Airport. You will be responsible for delivering a world‑class food and beverage experience that reflects New Zealand’s Māori heritage and the high standards of a 5‑star airport hotel.

Key responsibilities

• Deliver exceptional food and beverage service, ensuring high guest satisfaction, accurate ordering and billing.
• Lead, recruit, train and develop the restaurant team, fostering a culture of manaakitanga.
• Manage stock ordering, inventory control, equipment maintenance and hygiene standards.
• Maintain compliance with liquor licensing, hotel policies and food safety regulations.
• Oversee financial performance, including stock takes, monthly reporting, KPI tracking and conference/function coordination.
• Drive continuous improvement initiatives to enhance service quality and operational efficiency.

Required profile

• Minimum 5 + years in a senior leadership role within five‑star hotels or high‑volume restaurants.
• International experience is highly desirable.
• Strong organisational and administrative abilities with an eye for detail.
• Calm, solutions‑focused attitude, especially during busy or disrupted periods.
• Demonstrates genuine care, hospitality and respect (manaakitanga) in all interactions.
• Holds a valid Manager’s Certificate.

Required skills

• In‑depth knowledge of food safety requirements.
• Understanding of alcohol service, wine varietals and beverage pairing.
• Proficiency in stock and inventory management.
